Gazpacho – BioSabor

Gazpacho is a light, healthy and salubre soup, rich in Lycopene, which is an antioxydant. Tomatoes are very low in energy (kcal), but with a very high level of water, minerals, vitamins, antioxydants and oligoelements. This Spanish Gazpacho can be enrich and personalized with other food (vegetables, cheese, eggs, ham…) as you like.
In the Spanish cuisine, Gazpacho is a cold soup, perfect to start the meal with some raw vegetables. Well appreciated during the hot summer in Andalucía region.
There are at least 60 versions of Gazpacho, some of them are very spicy, others very mild.
Anyway, the main ingredients are traditionally the same for all of them: peppers, tomatoes, cucumbers and onions, enriched with many different aromatic herbs.
Unmissable is stale bread, which, soften with water, makes the whole soup creamier. However, Gazpacho has to be eaten cold, sometimes even with some ice cubes, toasted bread and boiled eggs. Furthermore, it is an ingredient for aperitifs and even an energetic fresh drink.

How to serve:
The product we suggest is a vegetable soup, with a balanced taste, Organic and ready to use.
To serve in small bowls and add raw vegetables cube cut: onion, green pepper, celery, toasted bread and even cured ham or speck. We suggest to use Quartirolo, in order to obtain a delicate flavor, or some cheedar for a stronger aroma.
Some boiled eggs can make it more interesting. The bowls have to be served separately, in order to let guests to season their Gazpacho as they wish. Portions are simple: 200 – 250 ml each.
Calories: Gazpacho is the ideal product for those who do not want to fatten, it has only ~142 kcal per portion.
Wine to pair with: a white, mild and well-bodied wine, even sparkling like a Cava.
