Aceto Balsamico di Modena IGP – Quercia Oro is the best IGP balsamic vinegar made by Acetaia Castelli. A well-bodied product, with a density of 1.35 (71° brix), a marked sweet taste and a good acidity (6%). Curiously, balsamic vinegar is made from just two ingredients: cooked grape must and wine vinegar. Then, it is refined in ajar durmast barrels. Usually in the attic, where there is a good balance between temperature and moisture: perfect condition for the work of Acetobacter.
Where to use it in Gastronomy:
It pairs perfectly with sharp and ripened cheeses as Vezzena. Just pour few drops to soften spiciness.
Moreover, it is ideal to enrich gourmet salads.
