Sauce Aioli is a typical sauce original of Provence and of the Catalan cuisine too. A sauce very similar, even in the making method, to a garlic mayonnaise. Perfect to pair with Red Caviar (salmon roe)… And equally excellent to season toasted bread, enrich salads and as side dish for fish courses.
Our Pairing Suggestion:
You can make a very delicious seasoning with some Bonito del Norte, cooked egg yolk and Guérande Salt. Spread it on some toasted croutons and serve with a glass of either Dolcetto d’Alba or Morellino di Scansano DOCG.
