The sturgeon is a well known fish for producing some expensive and wanted black pearls: caviar. Since this information might sound familiar to the most, not all know that the sturgeon has one of the most tender and delicate meat.
This fine sturgeon fillets come from a crossbreeding between two species of sturgeon: Beluga and Siberian. Beluga sturgeon is a species of anadromous fish in the family Acipenseridae. It is found primarily in the Caspian and Black Sea basins, and formerly in the Adriatic Sea. Moreover, it is the third most massive living species of bony fish. While, the smaller Siberian Sturgeon is most present in all of the major Siberian river basins that drain northward into the Kara, Laptev and East Siberian Seas.
Sturgeons come directly from Italian’s breeding oasis set in the resurgence areas of the Marca Trevigiana. Place rich in extremely pure waters: a completely controlled supply chain to guarantee extremely high quality. The steamed fillets, without the addition of preservatives, according to the artisan recipe, are processed and packaged manually in extra virgin olive oil and enriched with a light smoked note.
