Description
Ragu of Chianina is the Tuscan ragu par excellence. The breed, Chianina, is original of the valley created by Chiana river, and, most certainly, is the most ancient cow breed of the world, its origin dates back to over 2000 years ago. Moreover, Chianina is the most majestic among cows: a white candid fur and more than 6 ft tall of muscles!
It is the same breed used for the best known Fiorentina. Anyway, as every ragu, it is quite difficult to prepare at home, and, most of all, it takes time. We suggest this ragu, traditionally made, without preservatives, excellent to season pasta, to avoid fatigue and save your time.

The meat of Chianina is typically lean and tasty, and it makes a perfect pair with Morellino di Scansano DOCG. You can also try with a glass of Nebbiolo, from Piedmont.
